Healthy Strawberry, Feta and Arugula Salad

Strawberry Feta Salad

Serves 4

  • 1 package organic strawberries
  • 4 tablespoons balsamic vinegar
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon extra virgin olive oil
  • 1 package feta cheese (ensure its made from sheep/goat cheese)
  • 4 handfuls organic baby spinach
  • 4 handfuls organic arugula
  • 1 handful of organic basil

Preheat oven to 350 degrees. Slice the strawberries in half, then place on a baking sheet. Drizzle over the balsamic vinegar and black pepper. Place in the oven for 10 minutes. Place the spinach and arugula in a large bowl, and dress with the olive oil. Chop the feta and add this to the bowl. Add the strawberries, along with the balsamic ‘juices’ and mix well. Top with some torn basil and enjoy!
